Burn Cottage Pinot Noir 2020
The Burn Cottage Pinot Noir 2020 is crafted using biodynamic and low-intervention winemaking principles, with minimal sulphur usage and no filtration before bottling. Fermentation takes place naturally without added yeasts or bacteria, and lasts for 18 days, with 7% of the grapes kept as whole bunches. The wine is then aged in a combination of Damy and Mercurey oak barrels, 25% of which are new, contributing to its nuanced character.
On the nose, the wine is fragrant and precise, offering aromas of cherry, violets, and spices, along with subtle hints of bramble and wet stones. The palate showcases finesse, with fine tannins that extend through a long, elegant finish.
This Pinot Noir pairs beautifully with dishes like roasted duck, grilled salmon, or a charcuterie board.
