Château Canon La Gaffelière is a distinguished estate located in the Saint-Émilion appellation on Bordeaux's Right Bank. Elevated to Premier Grand Cru Classé status, it is renowned for producing wines of exceptional elegance and complexity.
The 2021 vintage comprises 35% Merlot, 45% Cabernet Franc, and 20% Cabernet Sauvignon grapes. This blend, with a notable emphasis on Cabernet Franc, imparts aromatic complexity and structure to the wine. The estate's commitment to organic viticulture ensures that the wines authentically express their terroir.
Harvesting is conducted manually, with meticulous sorting to ensure optimal grape quality. Fermentation occurs in temperature-controlled wooden vats over approximately 29 days, utilizing pneumatic pigeage (punching down the cap) for gentle extraction. The wine is then aged for 15 months on fine lees in oak barrels, 40% of which are new, enhancing its complexity and depth.
The 2021 vintage presents an expressive bouquet of rose petals, lilac, sweet berry fruit, burning embers, and warm spices. On the palate, it is medium to full-bodied, seamless, and elegant, with a fleshy core of fruit, lively acidity, and beautifully refined tannins. The wine is elegant, refined, supple, and fresh, with a bouquet filled with flowers, dark cherries, spearmint, red fruits, and spices.
This red wine pairs excellently with roasted lamb, beef tenderloin, or game dishes. It also complements aged cheeses and mushroom-based recipes.
