Cesconi Olivar is a distinguished white wine from the Trentino region in northern Italy, specifically from the Pressano area. This region is renowned for its unique terroir, characterised by mineral-rich soils and a temperate climate, which contribute to the wine's distinctive profile.
Crafted from a blend of Chardonnay, Pinot Grigio, and Pinot Bianco, Olivar exemplifies the harmonious integration of these varietals, resulting in a wine of notable complexity and balance.
The vinification process involves hand-harvesting the grapes at optimal ripeness, followed by a brief maceration and gentle pressing. Fermentation occurs in large oak barrels and used barriques, where the wine matures for approximately 10 months. This careful aging process imparts subtle oak influences without overshadowing the varietal characteristics.
On the nose, Olivar reveals layered aromas of ripe stone fruits, such as apricot and peach, complemented by notes of white flowers and a hint of vanilla from the gentle oak aging. The palate is well-balanced, showcasing vibrant acidity alongside fresh citrus flavours and a touch of minerality. The finish is long and fragrant.
