Domaine Chevalier Aloxe-Corton Premier Cru Les Valozières 2021 is a prestigious wine from the Aloxe-Corton appellation in the Côte de Beaune, Burgundy, France. This region is renowned for producing some of the finest Pinot Noir wines in the world, with the Les Valozières vineyard being a highly regarded Premier Cru site. Located on the lower slopes of the famous Corton hill, the vineyard benefits from optimal exposure and well-drained soils, ideal for cultivating high-quality grapes.

This wine is made entirely from Pinot Noir, Burgundy's signature red grape variety. Known for its elegance and complexity, the 2021 vintage of Les Valozières showcases the classic characteristics of Pinot Noir grown in this region, combining vibrant fruit flavours with earthy and savoury undertones. The style is structured yet refined, making it suitable for both early enjoyment and cellaring.

Traditional Burgundian winemaking techniques are employed to craft this wine. Fermentation takes place in temperature-controlled vats, allowing for gentle extraction of colour and tannins. The wine is then aged in French oak barrels, with a portion of new oak used to enhance the complexity and texture. This maturation period helps integrate the flavours and tannins, resulting in a wine that is both balanced and expressive of its terroir.

This vintage presents a deep ruby-red colour. On the nose, it reveals aromas of ripe red fruits such as cherry and raspberry, intertwined with notes of spice, cedar, and a subtle earthiness. The palate is layered and elegant, with a silky texture and fine-grained tannins. Flavours of red berries are complemented by hints of forest floor and a touch of minerality, leading to a long and harmonious finish.

This red wine pairs beautifully with roasted duck, lamb, and game birds. It also complements earthy mushroom-based dishes and mature cheeses such as Comté or Époisses. Serve slightly below room temperature, around 16–18°C, to fully appreciate its aromatic complexity and structure.
