Jean Pabiot et Fils produces Domaine des Fines Caillottes Pouilly-Fumé in the heart of the Loire Valley, specifically in Pouilly-sur-Loire. The region is revered for its flinty, mineral-driven Sauvignon Blancs, with vineyards planted on classic terroirs including Caillottes limestone, Kimmeridgian marl, and flintstones. The domaine adheres to sustainable practices and is certified Terra Vitis and Haute Valeur Environnementale, underscoring its commitment to biodiversity and minimal inputs.
Made from 100% Sauvignon Blanc, this wine showcases the vibrant, aromatic style typical of Pouilly-Fumé. The approach emphasises freshness, minerality, and clarity of fruit expression.
Grapes are harvested at optimum ripeness with natural grass cover used between vine rows, and green harvesting and leaf thinning applied as needed. The wine undergoes partial skin maceration and strong settling for clarity. Fermentation and six months of ageing take place in stainless steel tanks, with temperature control and lees ageing enhancing finesse and depth.
Pale yellow in colour, this wine opens with a vivid nose of citrus and white fruits such as peach and pear. The palate echoes these aromas, presenting a rich and full-bodied structure that is well-balanced and lengthy, underpinned by the region's hallmark minerality.
This white wine is ideal with seafood, grilled or sauced fish, sushi, poultry, and white meats. It also pairs beautifully with goat's cheese. Serve chilled at around 12°C.
