This wine comes from the Ribeira Sacra region in Galicia, Spain, known for its dramatic terraced vineyards along the Sil and Mino rivers. Dominio do Bibei is located in the Bibei Valley, where a mix of slate, granite, and quartz soils contributes to the wine's unique minerality. The region benefits from an Atlantic climate with warm days and cool nights, allowing the grapes to develop balanced acidity and expressive aromas.
The 2021 Lalama is a blend dominated by 90% Mencia, with the remaining 10% consisting of Brancellao, Mouraton, Souson, and Garnacha Tintorera. It is a medium-bodied red wine with a focus on elegance and freshness, showcasing the complexity and diversity of Ribeira Sacra's indigenous grape varieties.
The grapes are manually harvested from vines aged 15 to 100 years, planted at altitudes ranging from 300 to 700 metres. After cold pre-fermentation maceration for two days, fermentation takes place in French oak vats with indigenous yeasts. Malolactic fermentation follows in 300-litre French oak barrels. The wine is aged for 18 months in a combination of oak barrels and vats, followed by 12 months in bottle. No filtration is performed, preserving the wine's natural texture and complexity.
Dominio Do Bibei Lalama 2021 offers a vibrant bouquet of ripe red fruits such as cherries and raspberries, complemented by notes of baking spices, cedar, and a touch of vanilla. On the palate, it is fresh and balanced, with smooth tannins, bright acidity, and a long, persistent finish. A minerality reminiscent of slate adds depth to this refined wine.
It pairs well with a variety of dishes, including grilled lamb, sausages, risottos, and spiced stews. It also complements lighter fare such as charcuterie or roasted poultry. Serve slightly below room temperature, around 16–18°C.
