Dominio Do Bibei Lalume 2020
Lalume is a white wine from the Ribeiro DO, neighbouring Ribeira Sacra in Galicia. Ribeiro is known for its distinctive terroir, characterised by decomposed granite soils (locally known as “Sábrego”) and varying vineyard altitudes between 250 and 700 metres. The region's cool Atlantic climate helps retain freshness in its white wines, particularly those made from indigenous varieties.
Lalume is a blend dominated by Treixadura grape (87%), with smaller proportions of Albarino and Godello. The wine reflects the elegant and complex style of Galician whites, with an emphasis on texture, balance, and aromatic intensity. The grapes are hand-picked, sorted, and cooled overnight. Whole-bunch pressing preserves the freshness of the juice, which is fermented using indigenous yeasts. Aging takes place in a combination of used oak barrels, foudres, concrete eggs, and stainless steel tanks, followed by additional maturation on fine lees in stainless steel, enhancing the wine's texture and aromatic complexity.
Lalume offers aromas of white stone fruits, such as peach and apricot, interwoven with floral notes and hints of fresh herbs. The palate is dense and oily, with vibrant acidity balancing its richness. The finish is long, dry, and mineral-driven.
This wine pairs beautifully with seafood, grilled fish, and creamy poultry dishes. It is also a great match for soft cheeses and vegetable-based dishes with a touch of cream or butter.
