Savigny-lès-Beaune is a renowned appellation in Burgundy's Côte de Beaune, celebrated for producing elegant and aromatic Pinot Noir wines. The "Les Lavières" Premier Cru vineyard is situated on south-facing, limestone-rich soils, contributing to the wine's distinctive character.
Crafted exclusively from Pinot Noir, this wine embodies a ripe and rich style, characteristic of the producer's approach. The vinification process involved fermenting 70% whole clusters, enhancing the wine's complexity and structure. Following fermentation, the wine was aged for 16 months in French oak barrels, with 20% being new oak, imparting subtle spice and depth.
This wine presents a deep ruby hue and a perfumed nose with notes of blueberry, redcurrant, and lavender. On the palate, it offers flavours of crushed raspberry and spice, complemented by sweet red fruit and herbs. The tannins provide weight and a sense of fleshy richness, balanced by acidity and a touch of gravelly terroir, culminating in a bold and elegant finish.
This wine pairs excellently with dishes such as fillet steak, various cheeses, charcuterie, or roasted poultry.
