The By Farr Shiraz hails from the Geelong region in southern Victoria, Australia, renowned for its cool climate, which is ideal for producing elegant, cool-climate Shiraz. Geelong's maritime influence, cool nights, and warm days provide optimal conditions for slow ripening, allowing for maximum expression of the fruit's natural acidity and complexity.

This wine is predominantly Shiraz (with a small percentage of Viognier), showcasing the elegance and intensity that come from the cool climate of the region. The co-fermentation of Viognier with the Shiraz adds a layer of richness, complexity, and aromatic expression, blending well with the core characteristics of the Shiraz grape.

All fruit is hand-picked from VSP trellised vineyards, with 20% of the grapes left as whole bunches to provide additional texture and complexity. Depending on the vintage, between 2-4% Viognier is co-fermented with the Shiraz, adding richness to the bouquet and palate. The fermentation is natural, lasting 19 days before pressing, and the wine is aged for 18 months in French oak, with 20% of the barrels being new. This careful approach ensures the development of a complex, elegant wine with balance and character. The wine is bottled under vacuum to preserve freshness.

Expect complex aromas of spice, pepper, and earthiness, underpinned by a rich fruit profile. Notes of dark berries, black pepper, and mineral elements are complemented by hints of violet, herbs, and a subtle touch of earthiness. On the palate, the wine is smooth, with a pleasant initial sweetness that evolves into intense fruit, earthy notes, and a finish marked by long tannins and a complex, delicate structure.

The By Farr Shiraz 2020 pairs excellently with grilled meats, such as lamb chops, steak, and roast beef. It also complements mushroom dishes, particularly wild mushroom risotto or braised beef with mushrooms. It is a great match for spicy barbecue dishes, as well as charcuterie.
