This wine comes from the Macon-Villages appellation in the southern part of Burgundy, France. Known for its high-quality yet accessible white wines, this region benefits from a temperate climate and clay-limestone soils. The term Vieilles Vignes translates to "old vines" referring to vines typically 30 years or older, which produce lower yields of more concentrated and complex fruit.
Made entirely from Chardonnay grapes, this wine represents the quintessential style of the Maconnais region—aromatic, crisp, and fruit-forward. The Vieilles Vignes designation enhances the wine's depth, showcasing rich flavours with an elegant mineral backbone. The Chardonnay grapes are hand-harvested and gently pressed with a pneumatic press to extract pure juice without bitterness. The wine undergoes cold stabilisation for two days, followed by fermentation in temperature-controlled stainless steel tanks to preserve freshness and aromatics. Aged on its fine lees, it achieves additional texture and complexity while maintaining its lively character. Full malolactic fermentation rounds out the acidity.
This wine has a pale lemon-yellow colour with a fragrant bouquet of stone fruits like peach and apricot, complemented by notes of lemon zest, acacia flowers, and a hint of chalky minerality. On the palate, it is precise and structured, featuring flavours of fresh pineapple, green pear, and citrus. The finish is long, with lively acidity and a slight saline touch.
Domaine Touzot's Macon-Villages Vieilles Vignes pairs beautifully with roasted chicken, creamy risottos, and grilled fish. It is also an excellent match for soft cheeses like Brie or Camembert, and it works well as an aperitif.
