This wine is produced in the Picpoul de Pinet AOC, located in the Languedoc region of southern France. Nestled close to the Mediterranean coast near Sete, the vineyards enjoy a warm maritime climate that helps maintain freshness and acidity in the wines. The Picpoul de Pinet appellation is renowned for its crisp, vibrant white wines, primarily crafted from the Picpoul Blanc grape. Domaine Gaujal de Saint Bon, a small family-run estate, focuses on producing artisanal wines that stand out in a region dominated by cooperative wineries.

Made exclusively from Picpoul Blanc grapes, this wine embodies the classic style of the appellation—light-bodied, fresh, and zesty. Known locally as the “lip-stinger” due to its bright acidity, Picpoul Blanc thrives in the hot climate. Domaine Gaujal uses neutral yeasts to ensure the true expression of the grape and terroir. The wine is fermented in stainless steel tanks and aged on fine lees for 7–8 months, significantly longer than typical for the region.
