The Chablis 1er Cru Montmain is part of the prestigious Premier Cru classification in Chablis, Burgundy. Located on limestone-rich Kimmeridgian marl soils, this terroir is known for producing wines with vibrant acidity and minerality. The vineyards benefit from cool climates that preserve the freshness and aromatic purity of the Chardonnay grape, making this wine a quintessential expression of Chablis' unique terroir.
Made entirely from Chardonnay grapes, this wine showcases the elegance and finesse associated with Premier Cru Chablis. The style emphasises a fresh, mineral-driven profile with a medium body, vibrant acidity, and layers of citrus and orchard fruit. It is versatile and balanced, ideal for immediate enjoyment or ageing.
After manual harvesting, the grapes are gently pressed using a pneumatic press. The juice undergoes a natural clarification for 12–24 hours without added enzymes. Alcoholic and malolactic fermentation occurs under controlled temperatures in stainless steel tanks. The wine is aged for 6–12 months, with 20% of the cuvée maturing in oak barrels to enhance complexity while maintaining the wine's freshness.
The 2019 vintage reveals aromas of yellow plum, orange zest, and crushed stone, complemented by hints of mint. The palate is well-balanced, with flavours of mandarin, crisp apple, and a pronounced mineral finish. Its acidity is well-judged, making it both refreshing and elegant, with a persistent, cohesive finish.
This Chablis pairs perfectly with seafood dishes such as scallops, oysters, and grilled fish. It also complements creamy dishes like risotto and soft cheeses. For a more robust pairing, try it with white meats in rich sauces, such as veal or poultry. Serve at 12–13°C.
