Chablis Grand Cru Vaudesir is one of the most distinguished vineyards in the Chablis region of Burgundy, France. Located on the right bank of the Serein River, it benefits from a south and southeast orientation, providing optimal sunlight for grape ripening. The Kimmeridgian marl soil, rich in fossilised marine deposits, is characteristic of this area and imparts a signature minerality to the wines. Vaudesir's unique position within the Grand Cru classification makes its wines elegant, powerful, and highly sought after.
This wine is made from Chardonnay, the iconic white grape of Burgundy. Grand Cru Chablis is known for its refined structure, showcasing a harmonious balance of richness and minerality. Vaudesir, in particular, is celebrated for producing full-bodied wines with layers of complexity, marked by both ripe fruit and floral nuances.
After a gentle pressing, the juice undergoes natural clarification for 12–24 hours without enzymes. Both alcoholic and malolactic fermentation occur under strict temperature control to preserve freshness and enhance texture. The wine is aged for 8–12 months, with 30% matured in oak barrels. This careful process integrates oak subtly while allowing the wine's purity and terroir expression to shine.
The 2021 vintage offers a velvety texture with aromas of honey and ripe fruits, such as peach and apricot. On the palate, it is ample and long, with intense flavours and a harmonious balance of richness and acidity. The mineral backbone reflects the typical Vaudesir terroir.
It pairs exquisitely with pan-seared scallops with balsamic glaze, veal escalope in cream sauce, or the local favourite, Epoisses cheese. Serve chilled at 12–13°C. The wine has a cellaring potential of 5–15 years, allowing it to develop further depth.
