Inniskillin Icewine Riesling 2021
Inniskillin Icewine Riesling is crafted in the Niagara Peninsula, specifically Niagara-on-the-Lake, Canada. This cool-climate region benefits from mineral-rich soils formed by glacial deposits and a unique microclimate moderated by Lake Ontario and the Niagara River. These conditions are ideal for producing high-quality icewine, a Canadian speciality that thrives in the cold winter months when grapes are naturally frozen on the vine.
This wine is made entirely from 100% Riesling, a grape variety celebrated for its aromatic intensity and balanced acidity. Crafted in the icewine style, it offers a sweet yet vibrant profile, showcasing concentrated flavours and aromas that result from the natural freezing process.
The Riesling grapes were harvested at -10°C during early January 2021. This extreme cold allowed the berries to naturally freeze, concentrating their sugars and flavours. After pressing, the juice was settled, racked, and inoculated with yeast. Fermentation took place at a controlled temperature for 23 days, halting at the perfect balance of sugar, alcohol, and acidity to maintain the wine's signature harmony.
The 2021 vintage offers an enticing aromatic profile, with intense notes of lemongrass and honeydew melon. On the palate, citrus flavours of lemon and lime dominate, complemented by a lively, fresh acidity that balances the wine's sweetness. The finish is long and refreshing.
This icewine pairs beautifully with fruit-based desserts like lemon tarts, poached pears, or tropical fruit pavlova. It also pairs well with blue cheese. Serve chilled.
