This sparkling icewine is produced in Niagara Peninsula, Canada, a region renowned for its cool climate, which is ideal for the production of icewine. The area benefits from the moderating effects of Lake Ontario and the Niagara River, which ensure consistent temperatures during the fruit ripening phase. The mineral-rich soils left behind by glaciers also contribute to the unique character of wines from this region. Vidal, a hybrid grape, thrives here due to its ability to withstand the cold winters and produce concentrated, flavourful grapes perfect for icewine production.

The wine is made from Vidal, a hybrid grape that is highly suited to the production of icewines in the Niagara region. Vidal is known for its thick skin and high natural acidity, which helps balance the rich, sweet flavours that develop as the grapes freeze on the vine. This sparkling icewine is a unique expression of the Vidal grape, offering a balance of sweetness with refreshing acidity and lively effervescence.

The grapes for this icewine were harvested at an ideal temperature of -10°C to ensure maximum concentration of sugar. After pressing, the juice was fermented using a specific strain of yeast in a Charmat tank at a controlled temperature. The fermentation process was carefully managed to preserve the freshness and fruity character of the wine, which was then bottled with an alcohol level of 9.5% and left to mature with its natural effervescence.

You can expect a vibrant nose filled with exotic fruit aromatics, including peach, orange, and mango. On the palate, it delivers citrus, lychee, and pineapple flavours, all harmonised by a crisp acidity. The lively bubbles add a refreshing texture, while the finish is long and clean, leaving a lasting impression of the fruit's natural sweetness and minerality​.

It works well with a variety of appetizers, including fresh oysters, and spicy dishes such as sushi or tuna tartare with fresh chili. It also pairs beautifully with fruit-based desserts, from crème brûlée to tropical fruit sorbets.
