The Chablis Grand Cru is one of the most prestigious wine regions in Burgundy, France. It is located in the northernmost part of Burgundy, closer to Champagne than the rest of the region, and is known for its distinctively mineral-driven wines. The unique terroir of Chablis, especially in the Grand Cru area, features Kimmeridgian soil—a mix of limestone and clay rich in fossilised marine life, which imparts a signature flinty and crisp minerality to the wines. The Chateau Grenouilles vineyard lies on the right bank of the Serein River, nestled between the Grand Cru Vaudesir and Valmur vineyards, benefiting from a south-west exposure. This region produces wines with excellent ageing potential due to the soil and climatic conditions.
This wine is made from Chardonnay grapes, reflecting the classic style of Chablis. The Chardonnay from this region is renowned for its purity, minerality, and crisp acidity, which are balanced with complexity from ageing. This Grand Cru is a refined expression of this style, with great structure and freshness, offering the elegance typical of high-quality Chablis.
The wine undergoes cold settling before fermentation, ensuring that the natural flavours are preserved. Both the yeast fermentation and malolactic fermentation take place in tanks and barrels, where the wine spends 14 months ageing on fine lees. This process adds depth and richness to the wine while maintaining the freshness. The wine is made with minimal intervention to showcase the purity of its fruit and the expression of the terroir.
The 2021 vintage of La Chablisienne Château Grenouilles Chablis Grand Cru displays a pale gold colour with silver reflections. The nose is fresh and delicate, opening with citrus aromas of lemon and bergamot, alongside subtle vegetal notes of honeysuckle. With aeration, the fruit intensifies, revealing a distinct iodine and mineral character. On the palate, it is well-balanced, with integrated oak adding sweetness and volume. The finish is spicy, with hints of white pepper, offering power, persistence, and excellent ageing potential.
This wine pairs excellently with flambéed langoustines, scallop tartare, or carpaccio. It also complements roast pike-perch fillet and can even be enjoyed with millefeuille for dessert.
