La Giustiniana's Montessora Gavi di Gavi hails from the esteemed Gavi region in Piedmont, Italy, renowned for producing some of the finest expressions of the Cortese grape. The Montessora vineyard, situated in Rovereto di Gavi at an altitude of 400 metres, features gravelly soils with alluvial clays rich in iron, contributing to the wine's body, complexity, and minerality.
This wine is crafted exclusively from 100% Cortese grapes, a variety celebrated for its crisp acidity and delicate floral and fruit notes. The Montessora vineyard's old vines, aged between 35 to 70 years, yield grapes of exceptional quality, resulting in a wine that is both intense and concentrated.
Upon arrival at the winery, the ripe grapes undergo gentle pressing. The juice is then clarified using flotation before fermentation in temperature-controlled stainless steel tanks over two weeks. Post-fermentation, the wine is stored until bottling in the spring following the harvest, preserving its fresh and vibrant character.
In the glass, this Gavi di Gavi presents a light straw-yellow hue with a greenish tint. The nose offers fresh notes of flint and flowers, leading to aromas of white and stone fruits, lime zest, and subtle green apples. On the palate, it is intense and concentrated, showcasing pure fruit flavours of peach and lime that extend into a long, mineral-driven finish. The wine's lively acidity and characteristic minerality make it a quintessential expression of traditional Gavi.
This white wine pairs beautifully with antipasti, fish and shellfish, particularly oysters and caviar, lean fish, and cured meats.
