This wine originates from the Helderberg Mountain area in Stellenbosch, South Africa, a region renowned for producing some of the country's finest Cabernet Sauvignon. The vineyard is situated at an elevation of 300 metres, benefiting from the cool climate and maritime influence that ensures a long and even ripening season. The soils, rich in iron and sandstone, provide excellent drainage and contribute to the wine's structure and mineral complexity. Stellenbosch is celebrated for its combination of old-world elegance and new-world fruit-driven wines.
Made from Cabernet Sauvignon grapes, this wine reflects the varietal's hallmark characteristics of concentration, balance, and finesse. It is crafted in a style that highlights ripe fruit flavours, showcasing the best of Stellenbosch's terroir-driven Cabernet Sauvignon. The grapes were hand-harvested and destemmed into tanks with minimal use of sulphur dioxide. Fermentation occurred naturally with indigenous yeasts, beginning after a four-day cold soak. The wine was pumped over twice daily, with temperatures carefully maintained to preserve delicate aromatics. After fermentation, the wine underwent three weeks of extended maceration before being transferred to 500-litre French oak barrels (one-third new) for initial aging. It was then racked and blended into larger oak barrels for a further 15 months of maturation before bottling.
This Cabernet Sauvignon is aromatic and expressive, with layers of mulberry, dried orange peel, and subtle herbal undertones. The palate offers concentrated notes of cassis and fresh plum, framed by silky tannins. The finish is long and refined, showcasing the wine’s balance between ripe fruit and elegant structure.
This wine pairs beautifully with grilled lamb chops, beef bourguignon, or a mushroom risotto. It also complements mature cheeses and roasted vegetables. Serve at 16–18°C.
