La Sarabande is crafted in the Pic Saint-Loup AOC, a highly regarded appellation in the Languedoc region of southern France. This area is characterised by limestone soils and a Mediterranean climate tempered by cool breezes from the nearby Cevennes mountains. These conditions favour slow ripening, allowing the grapes to develop intense flavours while retaining freshness and balance. Pic Saint-Loup is known for its refined and aromatic red blends.
The 2021 La Sarabande blend consists of 50% Syrah, 40% Grenache, 5% Carignan, and 5% Cinsault. This combination highlights Syrah's structure and spice, Grenache's ripe fruit and richness, Carignan's rustic complexity, and Cinsault's light floral and red fruit notes. The wine delivers a sophisticated expression of the region. Each grape variety is harvested and vinified separately to maximise its potential. The grapes undergo fermentation with gentle extraction techniques to maintain fruit purity and fine tannins. The wine is then aged in a mix of vats and oak barrels, which refines its texture and integrates its flavours without overshadowing its natural freshness.
The 2021 vintage displays a deep ruby colour with violet highlights. The nose offers a complex bouquet of blackberries, raspberries, and plums, accentuated by hints of pepper, herbs, and floral undertones. On the palate, it is full-bodied yet supple, with layers of dark fruit, savoury notes, and a touch of graphite minerality. The finish is long and smooth, with well-integrated tannins and a pleasing freshness.
La Sarabande pairs beautifully with roasted or grilled meats, such as lamb or duck, and Mediterranean dishes like moussaka or ratatouille. Its rich profile also complements hard cheeses like aged Gouda or Manchego.
