Marcillac AOC, located in the Aveyron region of south-western France, is renowned for its steep terraced vineyards and striking red soils rich in iron oxide, known locally as "rougiers." Nestled at the foothills of the Massif Central, Marcillac enjoys a continental climate with cold winters and hot, dry summers. This unique environment, combined with its historical association with the monks of the Abbey of Conques, makes Marcillac one of France's most picturesque and historic winemaking regions. It is also the heartland of the Mansois grape, also known as Fer Servadou, which thrives in this terroir.
The wine is crafted exclusively from Mansois, a grape that is the hallmark of Marcillac's identity. Known for its fresh acidity, soft tannins, and vibrant aromatic profile, the 2023 vintage of Fer De Soif is designed as an easy-drinking “vin de soif”. It offers a lively, fruit-forward style with delicate floral and spice notes, reflecting both the grape's characteristics and the region's unique terroir.
The grapes are hand-harvested in mid-October to ensure full ripeness. After a gentle pressing, fermentation takes place at a controlled temperature to preserve the wine's aromatic qualities. A maceration period of 12–18 days enhances flavour complexity while maintaining a supple tannic structure. The wine is aged in tanks for 10 months to preserve its fresh, varietal-driven character, resulting in a bright and approachable style.
The wine displays a brilliant violet hue. On the nose, it is fresh and expressive, with dominant aromas of liquorice, violet, and hints of red pepper and peony. The palate mirrors these aromatics, offering a lively and refreshing profile with soft tannins and a smooth, fruit-driven finish. The wine is light-bodied yet flavourful, making it both elegant and easy to enjoy.
This red wine pairs beautifully with dishes like pot-au-feu, veal blanquette, and osso bucco. It is also an excellent match for barbecued meats, sweet-savoury dishes like couscous, or spiced sausages. Cheese lovers will enjoy it alongside raclette or tartiflette. Serve slightly chilled at 15°C.
