Mailly is located in the Montagne de Reims, a prestigious region in Champagne, France, celebrated for its Grand Cru vineyards. The terroir benefits from predominantly north-facing slopes, which provide cooler conditions that enhance the freshness and complexity of the Pinot Noir grapes. The region's chalky subsoils contribute to the distinctive minerality and structure of the wines, making it one of the most revered areas for crafting premium Champagne.

This Champagne is made from Pinot Noir, a grape variety known for its depth, richness, and versatility. As a Blanc de Noirs, it uniquely showcases Pinot Noir's potential in a white wine style, delivering a blend of vibrancy and structure. The style emphasises freshness and a creamy texture, with complex fruit and spice notes that make it both elegant and versatile.

Mailly Blanc de Pinot Noir is crafted exclusively from first-press wines, ensuring the highest quality juice. The wine is tank and barrel-aged separately, with reserve wines aged in a solera system to add depth and consistency. Following blending, the wine undergoes traditional ageing in the chalk cellars, enhancing its finesse and allowing the flavours to integrate harmoniously.

The Champagne offers a delicate balance between crispness and softness, with subtle citrus aromas complemented by notes of roasted tropical fruit and sun-ripened wheat. On the palate, it is lively, featuring fleshy fruit flavours punctuated by citrus zest and a distinctive saline finish. The texture is plush, with a structure that is both spicy and well-balanced, leaving a chiselled impression.

It pairs beautifully with pan-fried seafood, or roast turbot with white butter. It also complements succulent poultry dishes, such as free-range Bresse capon, and pairs surprisingly well with Indian Tandoori-style recipes. For a delightful finish, enjoy it alongside a selection of cheeses. Serve chilled at 8–10°C.
