The wine comes from Mercurey, a village in the Cote Chalonnaise in Burgundy, France. Known for producing elegant Pinot Noir wines, Mercurey is one of the most significant appellations in the region. Its marl, clay, and limestone soils contribute to the structure and depth of the wines. The diverse terroirs of Domaine Meix Foulot's vineyards, which are located across different exposures (south, southeast, and southwest), allow for a variety of influences on the wine, adding complexity. ​

The Meix Foulot Mercurey Red is made from Pinot Noir, the flagship grape of Burgundy. The wine is known for its balance of fruitiness and subtle tannins, showcasing the classic Mercurey style. It offers a combination of elegance and potential for aging. The wine's complexity is enhanced by the estate's diverse terroirs, which include a blend of young and older vines, contributing to its aromatic richness. Hand-harvested grapes are carefully transported to the cellar, where they are sorted and destemmed. The fermentation lasts between 15 and 20 days, with some gentle techniques like punching down and pumping over, depending on the vintage's characteristics. The wine is aged for 14 to 15 months, with 40% of the wine remaining in vats to preserve fruit freshness, while 60% is aged in barrels (2 to 5 years old) to develop complexity and subtle spice. After malolactic fermentation, the wine is racked and prepared for bottling with minimal filtration​.

The 2021 vintage presents a brilliant garnet red colour. The nose is intense and complex, featuring aromas of classic red fruits like cherry, raspberry, and redcurrant, with a delicate hint of oak. On the palate, the wine is harmonious, with the fruit balanced by a fine tannic structure. As the wine ages, the tannins soften, and the fruit deepens, providing a smooth and persistent finish​.

This Mercurey pairs well with grilled meats and cheeses. As it matures, it becomes a perfect match for more complex dishes like marinated red meats, stews, and hearty game dishes. Serve at around 17°C.
