Nyetimber's Classic Cuvée is a distinguished English sparkling wine produced in the counties of West Sussex and Hampshire. These regions offer a climate and chalky soils similar to those of Champagne, France, providing ideal conditions for cultivating traditional sparkling wine grape varieties. Nyetimber, established in 1988, is a pioneer in English sparkling wine production.
This wine is a blend of Chardonnay (55-65%), Pinot Noir (30-40%), and Pinot Meunier (5-15%), mirroring the classic Champagne varietal composition. The multi-vintage approach combines wines from various years to achieve a consistent house style.
The winemaking process involves meticulous selection of grapes from Nyetimber's estate-owned vineyards. After primary fermentation, a portion of reserve wines (20-35%) is incorporated to add depth and complexity. The wine undergoes secondary fermentation in the bottle, following the traditional method, and is aged on its lees for over three years. This extended ageing period contributes to the development of toasty and spicy aromas.
The Classic Cuvée displays a pale golden hue with fine bubbles. On the nose, it reveals toasty and spicy aromas, indicative of its extended lees ageing. The palate is rich and layered, featuring flavours of honey, almond, pastry, and baked apples.
This sparkling wine pairs well with seafood, such as oysters and scallops, as well as poultry and creamy cheeses. Serving temperature 8-10°C.
