Domaine Paul Doucet Sancerre 2023 hails from the Sancerre AOP, one of the most prestigious appellations in the Loire Valley, France. Situated on the left bank of the Loire River, opposite Pouilly-Fumé, Sancerre is famed for its Sauvignon Blanc wines, which express a distinctive balance of minerality, freshness, and aromatic intensity. The village of Sury-en-Vaux, where Domaine Paul Doucet is located, benefits from a mix of clay, limestone, and "Caillottes" (small stones) in the soil.

This wine is made from 100% Sauvignon Blanc, the defining grape of Sancerre. The region is known for producing vibrant, mineral-driven white wines that balance fruit, acidity, and structure. Domaine Doucet's Sancerre Blanc reflects the terroir's character, with an elegant profile that showcases both floral and citrus notes.

The grapes are gently pressed using pneumatic presses to extract pure, fresh juice. Fermentation occurs spontaneously with native yeasts, preserving the wine's authenticity and connection to its terroir. The wine is then vinified and matured in stainless steel tanks, ensuring a crisp and clean expression of Sauvignon Blanc. It remains on fine lees for added texture and depth, enhancing its mouthfeel and complexity.

It presents a pale golden colour with silvery glints. The nose is highly aromatic, rich, and complex, with delicate floral notes of lily of the valley and white lilac, layered with expressive hints of peach and mandarin zest. On the palate, the wine has a soft, rounded mouthfeel, followed by a full yet fresh evolution, leading to a long, vibrant finish. Subtle notes of orange and mandarin linger, adding to its refined and refreshing character.

This white wine pairs beautifully with seafood and shellfish, such as oysters, scallops, and grilled prawns. It also complements goat cheese, a classic pairing for Sancerre, as well as asparagus, fresh salads, and citrus-based dishes. Serve chilled at 8–10°C.
