Raventos i Blanc De La Finca 2020
De La Finca is produced by Raventós i Blanc in the Conca del Riu Anoia, located in Alt Penedès, Catalonia, Spain. This region, a cornerstone of sparkling wine production, features Mediterranean climates with mild winters and warm, dry summers. The Vinya dels Fòssils vineyard, where this wine is sourced, lies on soils rich in marine fossils, contributing salinity and minerality to the wine.
The blend comprises 50% Xarel-lo, 40% Macabeo, and 10% Parellada, the classic trio of Cava varietals. This sparkling wine embodies a dry, mineral-driven style with refined acidity.
The grapes are hand-harvested and gently pressed at low pressure. Fermentation takes place in stainless steel tanks with native yeasts at controlled temperatures. The wine undergoes its second fermentation in the bottle and is aged on lees for 30 months, imparting depth and a creamy texture while preserving its vibrant freshness.
De La Finca 2020 exhibits aromas of brioche, lemon, and green apple, complemented by subtle notes of smoke, fennel, and undergrowth. On the palate, it is fresh and mineral, with a creamy texture and fine bubbles. The wine balances its lively acidity with maturity, delivering a long-lasting finish.
This wine pairs wonderfully with seafood dishes, such as fish in lemon sauces or shellfish. It also complements creamy meats, quiches, and Mediterranean-inspired appetisers.
