Domaine du Roc des Boutires Pouilly-Fuissé 1er Cru Aux Chailloux 2022 comes from the Pouilly-Fuissé appellation in southern Burgundy, France, specifically the vineyard 'Aux Chailloux' which was elevated to Premier Cru status in 2020. Located to the east of the village of Pouilly, the vineyard benefits from a gentle slope with a southerly exposure. The region is renowned for its exceptional Chardonnay wines, known for their richness, minerality, and complexity, thanks to the area's clay and Jurassic limestone soils.
This wine is made from 100% Chardonnay, the signature white grape of Burgundy. The old vines, averaging 60 years of age, produce low yields of highly concentrated fruit. The 2022 vintage highlights the grape's ability to balance richness and vibrant acidity, showcasing a classic yet modern style of Premier Cru Pouilly-Fuissé.
The hand-harvested Chardonnay bunches were gently whole-bunch pressed upon arrival at the winery. The must was settled at a low temperature of 8°C before being racked into used French oak barrels for fermentation. Malolactic fermentation occurred naturally, and the wine was aged on fine lees for 11 months, with minimal batonnage to preserve its freshness and aromatic intensity.
Pale lemon in colour, the wine opens with enticing aromas of ripe apricot, peach, and lemon zest. On the palate, the lees ageing imparts a rich, creamy texture, balanced by a marked minerality and vibrant acidity. Flavours of stone fruits and citrus are well-defined, carrying through to a long, lingering finish.
This white wine pairs beautifully with seafood, such as scallops, lobster, or Dover sole, and works well with creamy poultry dishes or veal in a white wine sauce. You can also pair it with risotto or mushroom-based dishes to highlight the wine's minerality. Serve chilled at 10–12°C.
