Thierry Delaunay Casca is a Vin de France Sauvignon Blanc, highlighting an innovative take on this classic grape variety. Vin de France wines allow winemakers creative freedom, enabling unique interpretations that often depart from traditional regional classifications. This wine showcases an "orange wine" style, a distinctive approach gaining popularity for its bold flavours and intriguing textures.
Made entirely from 100% Sauvignon Blanc, this wine embraces the orange wine style, where white grapes are fermented with their skins, much like red wines. This technique enhances structure, tannins, and complexity, resulting in a vibrant and characterful wine.
The grapes are subjected to skin contact maceration in stainless steel tanks for 15 days, followed by an unregulated temperature alcoholic fermentation. The wine is then racked and aged on fine lees for three months, which enhances its textural richness and depth of flavour.
The 2021 vintage presents a deep orange hue. On the nose, it exudes powerful aromas of dried mandarin rind, honey, and almonds. The palate is vibrant and complex, with flavours of orange peel, honeysuckle, and ripe citrus fruits complemented by an elegant minerality. The wine's structure is marked by a grippy texture, which adds to its depth and uniqueness. The finish is long and persistent, leaving a honeyed and floral impression.
This wine pairs beautifully with chicken curries, spiced lamb dishes, and Thai cuisine. Serve slightly chilled.
