Valdespino Viejo C.P. Palo Cortado VOS Sherry
Valdespino Viejo C.P. Palo Cortado originates from the Macharnudo Alto vineyard, one of the finest terroirs in Jerez, Spain. Situated at 135 metres above sea level, this vineyard features albariza soils, known for their marine fossil content and moisture retention capabilities, which encourage deep-root development in the vines. This terroir contributes to the wine's exceptional complexity and minerality.
Made from 100% Palomino Fino, this sherry is a rare Palo Cortado style. Traditionally, Palo Cortado combines the finesse of an Amontillado with the richness of an Oloroso, achieved when a Fino loses its protective "flor" and undergoes oxidative ageing. It is aged for over 25 years in Valdespino's solera system, offering intense, nuanced character.
Fermented in 600-litre American oak barrels, the wine begins under a veil of flor before losing it and transitioning to oxidative ageing. The Palo Cortado is fortified to 17% and aged in a solera with criaderas. The process yields a sherry of depth and elegance, classified as VOS (Very Old Sherry) due to its extended ageing.
This Palo Cortado has a deep mahogany colour with orange hues. The nose reveals rich aromas of toffee, roasted coffee, dried figs, and almond paste, with hints of exotic spices and balsamic undertones. The palate is dry and tangy, featuring flavours of orange peel, hazelnuts, and bittersweet grapefruit, balanced by a vibrant acidity and a long, polished finish.
Its complex profile pairs well with aged cheeses, nuts, or charcuterie. It also complements game dishes, such as venison, or indulgent desserts like bitter chocolate torte.
